AS IT’S the fourth Saturday of the month, one of our longstanding cheese stalls returns this week.

The Weavers have been farming in the Cotswolds for the past three generations and in the south west of England since before 1570. They proudly follow a traditional method of organic farming and place great store in caring for the land and animal welfare.

The closed organic herd enjoy a forage-based diet and their milk production is not forced; they know that if their girls are happy, their cheeses will taste great too.

The farm is ideally suited for growing grass and during the spring and summer the clover-sown meadows deliver all their promise. Bordered by the River Dikler, the Fosse Way and the village of Lower Slaughter, the land is made up of low-lying river meadows that have never been intensively farmed. On the higher ground, nitrogen-rich clover-sown meadows create ideal grazing conditions for the winter months.

Fresh organic milk from ‘the girls’ (the Friesian cows) at Kirkham Farm is taken to the creamery each morning, where it is lovingly turned into a new batch of cheese.

Made from 100 per cent cow’s milk, the cheese is traditionally made and is available in three different varieties: Organic Cotswold Brie – beautifully soft and buttery, the original brie cheese is perfect served with fresh fruit.

Organic Cotswold Blue-Veined Brie – real cheese lovers favour this blue veined brie.

It is unique to Simon Weaver and has a rich creamy texture that goes particularly well with pear. Organic Cotswold Herb Brie – the subtle mix of organic herbs added to this cheese is the perfect accompaniment to soft crusty wholemeal bread or rustic oatcakes.

Elsewhere this week we have a new chilli plant stall starting and a new crafts stall called Dizzibirds textiles who make hand-fused organza flowers.

Other favourites include Fair and Square brownies, plenty of excitement for the barbecue at our brilliant meat stalls, a huge range of summer veg including new potatoes, broad beans and crunchy carrots and Tubby Tom’s barbecue sauces.
