PART boutique hotel, part adventure hideout, The Fish near Broadway reinvigorated Cotswold accommodation when it opened three years ago.

Now this award-winning hotel on the 400-acre Farncombe Estate is undergoing an extensive, £4 million renovation project which includes a new seafood inspired restaurant by two-Michelin star chef Martin Burge called the Hook.

Offering gourmet dining with a twist, the Hook launched earlier this year.

The new restaurant is a laid-back but luxurious celebration of responsibly sourced seafood with a menu featuring the finest, freshest fish.

Signature dishes include Porthilly rock oysters, poached blue chip salmon, whole baked seabass and lobster thermidor.

The all-day restaurant has outdoor seating on the terrace for alfresco dining, an open kitchen, 360-fire and cosy corners.

Classic dishes done well are a staple of most good menus and oysters and mussels are obviously included here, but Martin has of course put his own stamp on things. The French classic pissaladiere, a cheese souffle, cod cheeks and grilled mackerel are all starter options.

It was a tough choice but I plumped for the seared scallops with pickled ginger and miso butter sauce.

My instincts turned out to be spot-on as I was presented with a dish that seemed too ornate to eat.

It was absolutely delicious and I couldn’t have asked for a nicer starter to whet the appetite further.

The main menu is another treasure trove, with Bouillabaisse Hook style catching the eye, along with steamed sea bream and poached salmon.

I chose the slow braised octopus, with white beans in a chorizo broth, which came served in a lovely dish resembling a large oyster.

The octopus was perfectly cooked being just the right mixture of firm and soft and you could really taste the chorizo in the broth.

For dessert I chose the lemon posset on the recommendation of our waitress. Served with sorbet and fresh strawberries it was a wonderful way to end what was a truly wonderful and enjoyable meal.

As I prepared to leave, my mind started wondering what the future held for The Fish.

What new ideas would have been moved from plan to reality in another couple of years.

The hotel is perfectly wonderful as it is, but that won’t stop the innovation and progression and why should it?

This particular fish is determined to keep moving forward, seeking out new inlets and tributaries for success.
